Rhubarb TartCook Time: 25-30 min

Method: Preheat the oven to 350 degrees F. On a lightly floured board, roll out the pastry. Using a 4-inch-diameter plate as a guide, cut the dough into 4 rounds. Using your fingers, pleat the pastry around the edges to form a small dish with a 1/4-inch rim. Carefully arrange the sliced rhubarb in 2 concentric circles on top of each tart, making sure there are no gaps. Brush the tarts with melted butter and sprinkly with 3/4 cup of the sugar. Bake until the rhubarb is tender and caramelized, 25 to 30 min. Meanwhile, in a deep bowl, beat the cream with the remaining 1/2 cup sugar and whiskey until soft peaks form. To serve, place each tart on a warm plate and top with a dollop of whiskey cream. |
